This easy minestrone soup is amazing! I think it’s the best Minestrone soup I’ve ever had. In my opinion, is far better than the minestrone soup Olive Garden serves.
Leftover soup warms up wonderfully as the flavor continues to blend in the refrigerator. This soup makes a great work lunch, especially on cold days.

Easy Minestrone Soup Recipe
Here’s what you will need to make this minestrone soup recipe:
- 1 pound Italian Sausage (I use regular Jimmy Dean most of the time)
- 1/2 onion – diced
- 4 cups water
- 1 teaspoon beef bullion (I use Better Than Base Beef)
- 1 – 14.5 ounce can Italian Stewed Tomatoes with juice (Use regular tomatoes if that’s all you have)
- 1 cup carrots – chopped
- 1 can white beans with juice
- 2 zucchinis – cut in half lengthwise and then sliced into bite-sized pieces
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 teaspoon dried parsley
- 1/4 teaspoon dried Italian seasoning
- 2 cups fresh spinach – stacked the leaves and then cut into strips

In a large soup pot brown sausage and onion until sausage is no longer pink. Add in minced garlic and cook for two minutes.
Add the water, bullion, stewed Italian tomatoes (break them up with your hands), and carrots. Bring to a boil, and reduce the soup to a simmer. Simmer uncovered for 15 minutes.
Add in the white beans with juice, zucchini, salt, black pepper, parsley, and Italian seasoning. Bring to a boil again and then reduce to a simmer. Simmer 15 minutes.
Taste the soup for seasoning, add salt and pepper as needed. Now it’s time to add in the sliced spinach.
Cook the soup a few more minutes or until the spinach has wilted.
Serve this Easy Minestrone Soup with grated parmesan cheese and crusty bread. We ate our soup with some slices of French bread and it was so delicious! There’s just something so wonderful about dipping bread into this soup.
Easy Minestrone Soup Recipe

- 1 pound Italian Sausage I used the store brand in a chub roll
- 1/2 onion - diced
- 4 cups water
- 1 teaspoon beef bullion I use Better Than Base Beef
- 1 - 14.5 ounce can Italian Stewed Tomatoes with juice
- 1 cup carrots - chopped
- 1 can white beans with juice
- 2 zucchinis - cut in half lengthwise and then sliced into bite-sized pieces

- 1/4 teaspoon salt

- 1/4 teaspoon dried Italian seasoning
- 2 cups spinach - stacked the leaves and then cut into strips
Instructions

- Add garlic to the meat mixture, cook two minutes.
- Add in water, beef bullion, Italian stewed tomatoes with juice, and carrots. Bring soup to a boil and then reduce to a simmer. Simmer 15 minutes.
- Add in white beans with juice, zucchinis, black pepper, salt, parsley, and Italian seasoning. Bring soup to a boil and then reduce to a simmer. Simmer another 15 minutes.
- Taste soup for seasoning, add salt and black pepper if needed.
- Add in strips of spinach leaves. Cook a few minutes more or until the spinach wilts.
