Yum, meatballs and gravy! These meatballs are made with ground beef and crushed Xtra Cheddar Goldfish Crackers and they are truly delicious! The meatballs are easy to make and bake in the oven in just 20 minutes! No pan frying!
All this month I’ve been participating in the 2016 A to Z Challenge. The goal is to blog every day except Sundays. Each blogging day is assigned a letter going in order from “A to Z” and today’s letter is “X”. I have racked my brain trying to figure out topics that started with “X” that would work on Hangry Fork. I kept coming back to Xtra Gum, Xtra Cheddar Goldfish and Hershey’s Kisses I’d cheat and post them as XXX Chocolate Kisses. The Goldfish won!

Xtra Cheddar Goldfish Meatballs and Gravy Ingredients
Here’s what you need to make this meatball recipe:
- 1.5 pounds ground beef
- 1/2 cup onion – chopped
- 2 medium eggs
- 3/4 cup Xtra cheddar goldfish crackers – crushed
- 1/2 cup milk
- 1 teaspoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Here’s what you will need for the savory gravy:
- 6 tablespoons butter
- 6 tablespoons flour
- 4 cups beef broth
- 1 cup milk
- 3 teaspoons Worcestershire sauce
- salt and black pepper
- 1 teaspoon dried parsley
How to Make Xtra Cheddar Goldfish Meatballs and Gravy
Preheat oven to 400 degrees. Get out a big sheet pan with sides and spray it with non-stick spray.
Place the chopped onion in a microwave-safe bowl, sprinkle with a little water, cover, and microwave for about one minute or until the onion is cooked. Use a paper towel to remove the excess water from the cooked onions.
In a quart ziplock bag crush enough goldfish to make 3/4 cup of goldfish crumbs. I felt kind of bad crushing the goldfish. 😉
Add the crushed goldfish, milk and medium eggs to the cooked cooled down onion, stirring to combine.
Next, add the ground beef, Worcestershire sauce, garlic powder, salt, and black pepper. Use your hands to work the ground beef until everything is combined.
Now it’s time to roll the meatballs. I used a tablespoon to scoop up some of the meat mixture and then I used my hands to form meatballs. They are about the size of golf balls. I tried to keep them uniform, but I noticed they kept getting bigger as I went. 😆
When all the meatballs are formed, put them in the preheated oven and bake at 400 degrees for 20 minutes.
When the time is up, take the biggest meatball, cut it in half, and make sure it’s thoroughly cooked. Mine was! I ended up doing a quality control sample on this meatball, yum!
Making Savory Meatball Gravy Recipe
Now it’s time to make the savory gravy. In a large saucepan with sides, melt the butter over medium heat. When the butter has melted, add in the flour and whisk. Cook the flour in a couple of minutes, this step makes the difference between wonderful gravy and pasty gravy.
After the flour has cooked for at least two minutes, slowly add the beef broth. Add some broth, whisk, the gravy will thicken, keep repeating until all the broth has been added to the pan. Then whisk in the milk. Cook and let the gravy thicken, whisking often.
Add 3 teaspoons Worcestershire sauce, taste for salt and black pepper. Add the (optional) dried parsley. I also ended up adding a little dash of garlic powder to the gravy.
Place the warm meatballs in the gravy.

Xtra Cheddar Goldfish Crackers Meatballs
Ingredients
- 1.5 pounds ground beef
- 1/2 cup onion - chopped

- 1 teaspoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400 degrees.
- Prepare a large baking sheet (with sides) by spraying it with non-stick spray.
- Place onions in a large microwaveable bowl, splash with a little water, cover bowl, and microwave for about a minute. Use a paper towel to removed water from the bowl. Fold the paper towel and wipe under the onions.
- After onions have cooled down, add in crushed goldfish crackers, milk, and eggs. Stir to combine.
- Next, add the Worcestershire sauce, garlic powder, salt, black pepper, and ground beef.
- Use your hands to combine all the ingredients.
- Now it's time to roll the meatballs. Use a spoon or something that'll help you make meatballs about the same size, and shape the meatballs with your hands.
- Transfer meatballs to the prepared pan.
- Bake meatballs @ 400 for 20 minutes.
- After meatballs are done cooking check the largest meatball by slicing in half, the meatball should no longer be pink in the center.
- Serve with meatball gravy or your own favorite sauce.
Savory Gravy
Ingredients
- 6 tbsp Butter
- 6 tbsp flour
- 4 cups Beef Broth
- 1 cup Milk
- 3 teas Worchestershire Sauce
- Salt & Black Pepper
- 1 teas Dried Parsley
- 1 dash Garlic Powder (Optional)
Instructions
- In a skillet with side melt butter over medium heat.
- When butter is melted add in the flour.
- Cook flour, whisking constantly, for at least two minutes.
- Gradually stir in beef broth. Add a little beef broth and whisk, the gravy will begin to thicken when it does add more beef broth. Continue whisking until all the beef broth had been added.
- Whisk in milk and Worcestershire sauce.
- Season with salt and pepper.
- Add dried parsley and a dash of garlic powder.
