This is an easy to make Spicy Asian Chopped Salad. The dressing is very easy to make and doesn’t require any exotic ingredients. Chopped cooked chicken would be great in this salad, but I haven’t tried that yet. Chopped peanuts would be a great addition too, sprinkled on top

Spicy Asian Chopped Salad
Here’s what you will to make this wonderful spicy chopped salad:
For the Spicy Asian Salad Dressing
- 1/2 cup Mae Ploy Sweet Chili Sauce – it’s in the Asian section of your grocery store
- 1/4 cup heavy cream
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 heaping tablespoon peanut butter
- 2 cloves minced garlic
For the Spicy Asian Salad
- 2 heads romaine
- 1/3 head of green cabbage – thinly sliced
- 1/2 red onion – cut into thin slices
- 1 cucumber – peeled and cut into bite sized pieces
In a sauce pan combine all the Asian Salad Dressing ingredients.
Heat over medium and stir until everything is combined. Turn off the heat and remove the dressing from the burner so it can cool down.
Now it’s time to get the Asian salad chopped. I like to cut long strips down the center of the romaine heads, I make a slice down the length of the romaine head from just above the core (don’t cut through the core) to the tip, slicing right through the whole head, then I turn the head and cut down the next leave’s center and repeat a few times, depending on the size of your romaine lettuce. Then I cut across the romaine head into bite-sized pieces. There’s a video of this way of slicing romaine at the end of this post.
Below, you can see I have all romaine, cabbage, red onion, and cucumber sliced and tossed together.
After the homemade Asian salad dressing has cooled and is room temp go ahead and pour it on top of the tossed salad. If you are just one person or a couple, you may want to toss just what you will be eating and store the dressing separate from the salad until you are ready to eat it.
Toss to combine everything. Serve the Spicy Asian Chopped salad immediately.
