Delicious Vegetarian Belizean Kidney Beans and Rice

Delicious vegetarian Belizean kidney beans and rice made in the rice cooker.  This beans and rice recipe is delicious and so easy to make. Prep takes about five minutes and the rice cooker does all the cooking!

I cooked this recipe in a 5 1/2 cup Zojirushi rice cooker.

Rice Cooker Vegetarian Belizean Kidney Beans and Rice

Here’s what you need to make this:

  • Rice cooker
  • 2 rice cooker cups of white long-grain rice
  • 1/2 bell pepper – seeded and minced
  • 1/2 medium onion – minced
  • 3 – 4 cloves garlic – minced
  • 1 – can red kidney beans with juice
  • 1/2 can – coconut milk (6 – 7 ounces)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pinch thyme
  • Water

Using the rice cooker cup that came with your rice cooker, measure out two cups of rice.  Rinse and drain the rice a few times in water.  Add 1/2 can of coconut milk (6 or 7 ounces) to the rice pot and add water so that the liquid line is to the #2 line for white rice.  I filled mine just a little above the #2 line.

Add the minced onion, bell pepper, garlic, salt, black pepper, and a pinch of thyme.

Next, pour in the can of kidney beans.

Coconut Rice and Beans

Give everything a stir to combine.  Make sure all the rice is under the liquid.  Close the lid and start cooking.  My rice cooker has a “mixed” setting and this is what I used to cook this Vegetarian Kidney Beans and Rice dish.

Belizean Recipes

After 30-40 minutes or so (depending on your rice cooker) the Belizean kidney beans and rice will be done.  Fluff up the rice and taste for salt.  I ended up having to add a little salt.  After I added a little more salt I stirred salt in and then let the rice cooker sit for 10 minutes on warm.  The rice seemed to get a little darker than the pic below after sitting 10 minutes.




This rice is delicious and my kids (25, 18, and 15) and I ate the whole bowl!  We loved this kidney beans and rice dish so much I made it again this time with black beans which is similar to what we ate in Nicaragua.  They were both good but I think I preferred the kidney beans version.

Ingredients
  

  • 2 rice cooker cups of white long grain rice
  • 1/2 bell pepper - seeded and minced
  • 1/2 medium onion - minced
  • 3 - 4 cloves garlic - minced
  • 1 - can red kidney beans with juice
  • 1/2 can coconut milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pinch thyme
  • Water

Instructions
 

  • Rinse and drain rice a few times.
  • Add half can of coconut milk to rice, and then add enough water so that liquid is to the #2 line for white rice.
  • Add minced bell pepper, onion, garlic, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and a pinch of thyme to rice cooker bowl.
  • Stir in can of red kidney beans with the liquid. Make sure the rice is submerged.
  • Close rice cooker and start the cooking process.
  • When the time is up, taste for salt.

You are right Liz! Some people cook all kinds of things in a rice cooker. About a month ago I tried cooking mac & cheese in the rice cooker, it turned out okay but I need to work on the recipe a bunch.

So far my favorite rice cooker recipe is for Chinese Fried Rice... It's better than some fried rice I've had in Chinese Food restaurants... No kidding!
