Cut one whole chicken into eight pieces, two wings, two thighs, two drums, and two breasts.

With burner on medium, heat up some butter and olive oil in a large non stick large pot.

Combine flour and seasonings in ziplock bag.
Add chicken and toss to coat.

Brown chicken pieces.
While chicken browns, cut up the onion, carrots, celery, and garlic.
