Old Fashioned Smothered Chicken Recipe
This recipe is very similar to Chicken & Dumplings, minus the dumplings.
This is a nice economical chicken recipe, especially when whole chickens go on sale.
How to Make Smothered Chicken
butter & olive oil
flour & seasonings
onion, carrots, celery
frozen petite peas
Cut one whole chicken into eight pieces, two wings, two thighs, two drums, and two breasts.
With burner on medium, heat up some butter and olive oil in a large non stick large pot.
Combine flour and seasonings in ziplock bag.
Add chicken and toss to coat.
Brown chicken pieces.
While chicken browns, cut up the onion, carrots, celery, and garlic.
Remove browned chicken pieces to a plate.
Add the onion, carrots, and celery to the pot with the chicken drippings.
When the onions are tender, stir in four tablespoons of the saved seasoned flour garlic, cayenne, salt, and pepper.
Cook this stirring frequently for a few minutes.
The garlic will become fragrant, and the flour will coat the vegetables.
Stir in water,
better than base chicken stock, and add browned chicken to the pot.
Cover and simmer chicken over medium-low for 45 minutes.

After 45 minutes, remove the chicken breasts.
and then return meat to the pot.
Add frozen peas and cook another 15 minutes.
Taste for salt before serving.
