Rice Cooker Chinese Fried Rice Recipe

Rice Cooker Chinese Fried Rice Recipe. I made this recipe with browned bacon ends and chopped ham.

Ingredients
  

  • 2 cups uncooked white rice
  • 2 cups diced cooked meat bacon, ham, chicken, sausage, or whatever sounds good to you
  • 1 cup minced carrots
  • 1/4 cup soy sauce
  • 1 teaspoon fresh grated ginger or 1/4 teaspoon ground ginger powder
  • 2 teaspoons fresh minced garlic
  • 4-6 green onions divided - the whites are diced and cook with the rice, green tops diced and are added later with the scrambled eggs and frozen peas or 1/2 small onion diced
  • 1-3/4 cups chicken broth
  • 1 teaspoon oil I use either olive oil or canola oil
  • 1 teaspoon sesame seed oil
  • 2-4 eggs scrambled
  • 1/2 cup of frozen peas

Instructions
 

  • Rinse rice several times in the rice cooker bowl to remove the starch. Drain and place rice cooker bowl in the rice cooker.
  • Prepare two cups cooked meat and mince it.
  • In a large bowl combine the cooked minced meat, minced carrot, soy sauce, ginger, garlic, the minced whites of the green onion, chicken broth, canola oil or olive oil, and sesame seed oil. Pour this mixture on top of rice. DO NOT STIR.
  • Close rice cooker and choose "Mixed" if you have that setting, and then hit the start button. My cooker took about 50 minutes.
  • When the rice cooker signals that it is done, scramble the eggs in a skillet.
  • Pop the rice cooker open and fold the scrambled egg into the rice along with the minced green tops of the onion, and the frozen peas.
  • The rice cooker should be on "warm", close the lid and let the rice cooker warm up the frozen peas for about 10 minutes.
