Granny Cake is an old fashioned cake made from scratch with canned pineapple and peaches mixed inside the cake. Topped with a made from scratch coconut frosting, makes this cake irresistible. Sometimes I’ll mix things up and use a can of pineapple and a big can of tropical mixed fruit.
This is my husband’s favorite cake because it reminds him of a cake his grandma used to make for him when he was a kid. My son goes crazy for this cake too, I don’t know, it may be a man thing? One of my daughters loves this cake too.
The cake itself doesn’t contain any oil or butter, so I like to tell myself it’s healthy to eat.
Granny Cake Dump, Mix, and Bake
The cake goes together easily. I dump all the cake ingredients into my kitchanaid mixer and mix it until its all blended and then pour into a cake pan sprayed with Pam.
- Granny Cake Ingredients
- 1½ cups sugar
- 2 cans DRAINED canned fruit (I recommend pineapple and peaches)
- 2 eggs
- 2 cups flour
- 2 teaspoons baking soda
- 1 stick butter
- 1 cup sweetened coconut flakes
- ¾ cup brown sugar
- ½ cup evaporated milk
- Cake Instructions
- Set oven to 325 degrees.
- Combine all the cake ingredients into kitchenaid or mixing bowl. Mix well. Transfer to a 9x13 cake pan sprayed with non-stick spray.
- Bake 40-45 minutes.
- Combine all the frosting ingredients into a sauce pan. Bring to a boil and boil for two minutes. Pour frosting over hot baked cake.
