Almond Joy Pie – Easy Coconut Pie with Chocolate and Nuts

This recipe for Almond Joy Pie has been shared all over the internet for many years, it’s a great pie.  I didn’t use almond slices for this pie, they were really expensive at my local grocery store so I got a small bag of chopped nuts instead.

My spin on this pie should be called Nut Joy Pie, but that sounds kind of awkward and weird.

How to Make Almond Joy Pie

Here’s what you will need to make this delicious pie:

  • 1 graham cracker pie crust or Oreo pie crust
  • 4 tablespoons butter
  • 1 tablespoon flour
  • 1/2 cup granulated sugar
  • 1 1/2 cups shredded sweetened coconut
  • 1 egg
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 + cup milk chocolate chips
  • 1/2 cup roasted sliced almonds (I used chopped mixed nuts)

Preheat the oven to 350 degrees.

Place butter in a large microwave-safe bowl and microwave until butter is melted.  Let the butter cool down a bit and then add 1 tablespoon flour to the butter.  Whisk to combine.

Add the sugar to the butter-flour mixture and whisk to combine.

Add the egg and whisk.

Add in the sweetened coconut, 3/4 cup whole milk, and vanilla extract.  Whisk to combine.

Coconut and Chocolate Pie

Now it’s time to get the pie crust ready.  Take the lid off the pie crust.  Place half the nuts in the bottom of the pie crust and top with half the milk chocolate chips.  Some recipes specify for the chocolate chips to be melted.  I just let mine melt in the oven while the pie was cooking.

Pour in the coconut mixture.  Isn’t it pretty?

Place the pie in the preheated oven and bake @ 350 for 40 – 45 minutes or until the pie is set.  The top will be golden.  I have a convection oven and my pie crust got a little darker than I would have liked, especially side on the bottom of the pic.  I probably should have turned the pie after 25 minutes or so.

Hot Almond Joy Pie

Top the almond joy pie with melted milk chocolate chips.  I microwaved the chips and stirred them frequently.  In the past few years, I’ve noticed chocolate chips don’t melt like they used to.  Top the melted chocolate with the rest of the almonds or nuts.

Let the pie cool and then refrigerate.  Yum!

Ingredients
  

  • 1 graham cracker pie crust or oreo pie crust

Instructions
 

  • Preheat oven to 350 degrees.
  • Place butter in a large microwave-safe bowl and microwave until butter is melted. Let butter cool.
  • Add flour to butter and whisk to combine.
  • Add the granulated sugar to the bowl and whisk to combine.
  • Add the egg and whisk.
  • Next, add the sweetened coconut, whole milk, and vanilla extract. Whisk to combine.
  • Prepare the crust but placing half the nuts inside the crust and top the nuts with half the milk chocolate chips.
  • Pour the coconut mixture into the crust.
  • Bake @ 350 degrees for 40 - 45 minutes or until the pie is set.
  • Melt the remaining chocolate chips and drizzle the chocolate over the pie top.
  • Top with the remaining nuts.

I LOVE this pie!! I've made it several times now!! I found your recipe really by accident, I so grateful for this accident!! I had made an Almond Joy Cake several yrs ago, that everyone went crazy over!! Through being dx'd with MS, going through a divorce and moving 2 times now, i wanted to make it again! Can't find the recipe I used, searching the internet to find it and running out of time!! Everyone wanted it for Thanksgiving, we couldn't spend it sitting around the table (since the virus), we traded off dishes in order to do what we could to make it, better!! Anyway, (I’m a talker, sorry!) I ran across this recipe, ran out of time so, made one for everyone!! They absolutely LOVE it!!! More so than the cake!! And bonus, this is much easier than the cake!! I've made several since!! Don't change 1 thing, can't improve on PERFECTION!! THANK YOU!! BTW, I almost passed out when I clicked on your site!! Your Chihuahua, looks EXCACTLY like mine!! I lost mine in 2010! People tease that we were "soul mates" 😅, I miss her so much!!

If you put the chips on top of the pie when it first comes out of the oven the heat will melt them. Just wait 5 minutes and spread them with a palatte knife. You can also use 3 plain Hershey bars and let them melt the same way. Then the pie has a true candy bar taste.
